It occurred to me today that while I sit and do menu planning every Sunday night for the week ahead, I never share this info or the recipes on the blog.
These are often either meals that can be made in advance (in the afternoon) and feed the kidlets at 5pm and my husband and I after 8pm, like soups, baked risotto or pasta. Alternatively, I make something for the kiddies in the early evening and then a quick meal for us after they are all asleep. Things that are either not kid-friendly (grilled salmon with soba noodles) or pack a bit of a punch.
I am a bit of a veggie addict, love chick peas and jalapeño peppers. And ratatouille. Oh my goodness I could eat grilled ratatouille every night of my life.
So, on the menu this week:
- Baked risotto with mushrooms, spinach and bacon from Donna Hay. Although this was the first time I have made this recipe, it was super easy, super quick and super yummy. I love Donna Hay, such simple and elegant modern recipes. Have a look at her website for fast weeknight ideas and beautiful food photography.
- Melanzane - I have an amazing melanzane recipe that I need to share soon... Perfect for chilly winter evenings.
- Tonight I made this Tuscan bean and tomato soup. It was really good, but I would suggest that you go easy on the anchovies and use only one. Perfect with naan bread.
Tomorrow evening is maybe vegetarian chilli and lime stir fry with egg noodles, I haven't decided yet (so much for the planning!). Maybe I'll have to spend a little bit more time on Pinterest for some inspiration.
